Delicious zucchini spirals full of twirly fun!! The filo pastry makes them nice and crispy when fresh and I have to say, that zucchini rarely tastes better than this! As you all know, zucchini’s do have the tendency to be a bit bland to say the least, or unexciting at the most, but when twirled up in a spiral they definitely seem more appetising!


These spirals are also surprisingly easy to make! You just need to remember to factor in the ONE hour refrigeration time. Also try to roll the pastry up as tightly as possible! You’ll thank me later, when your spirals aren’t falling to pieces in your hands.

Zucchini spirals

Ingredients: 2 medium zucchinis coarsely grated, 1 small onion grated, 100g hot salami finely chopped, 2 cloves garlic finely chopped, ½ cup grated fresh parmesan cheese, 4 sheets filo pastry, 1/3 cup dried breadcrumbs, canola oil for spraying

Steps: Combine zucchini, onion, salami, garlic and parmesan in a large mixing bowl. Layer the filo pastry sheets together, spraying between each sheet with the canola oil. Spread the zucchini mixture over the pastry, leaving a 5cm border along one side. Sprinkle the breadcrumbs evenly over the zucchini mixture.

Roll the pastry up tightly over the filling towards the side with border. Spray the roll all over with canola oil, cover with plastic wrap and refrigerate for ONE hour.

Preheat the oven to moderately hot, 210 degrees Celsius. Using a sharp knife, cut the roll into 15 slices approximately 1.5cm thick, and arrange on baking trays lined with baking paper. Bake for 12-15 minutes or until spirals are crisp and well browned. Serve hot and fresh!

What's the difference between filo pastry and puff pastry? I just bought some puff pastry the other day, can I use that?

Sisi- Puff pastry is basically a much more richer pastry than filo pastry ie. puff pastry= loaded with many layers of buttery goodness, filo pastry = paper thin; can almost convince people that pasty is healthy.
