Wild Rice with Spinach Sprouts
Wild rice is very nourishing, contains high levels of dietary fibre as well as many other minerals required by the body.
Ingredients:
100g North America Wild Rice
200g Organic Spinach sprouts
1 Onion
2 Shallot
1 tsp Parsley
Grounded black pepper
Soup stock (5 large cups)
Sea Salt
2 tsp Peanut oil
Method:
1) Rinse the wild rice thoroughly before soaking it with 2 large cups of chicken broth/stock for 2 hours.
2) Remove skin of shallot, crush and chip into fine pieces.
3) Peel the onion, chop into fine pieces. Wash and slice the spinach sprouts.
4) Boil the spinach sprouts in 3 large cups of chicken soup stock. Keep the boiled spinach sprouts in a sieve and reserve the chicken soup stock for later.
5) Add 1 tsp of peanut oil to a heated saucepan then shallow fry the shallot, onion and soaked wild rice. Add the hot chicken soup stock to the frying mix.
6) Bring the mixture to the boil and cook the rice with medium heat. Constantly stir the rice mixture with a wooden spoon to prevent sticking and add sufficient soup stock if it dries quickly.
7) Add and stir the parsley and 1 tsp of peanut oil to the thoroughly cooked wild rice.
8) Serve cooked spinach sprout slices and grounded black pepper.
