Hello boys and girls! Long time no see! Well have I baked a treat for you! These White Chocolate & Macadamia muffins are absolutely delicious! My friend Jillian, is an absolute expert when it comes to making all things with white chocolate and macadamia and I stole this recipe off her! It’s a very simple recipe that can be whipped up in minutes, just add all the ingredients and stir! It’s as easy as counting 1,2,3.
Mmmmm…..Sweet and delicious and when they come freshly baked from the hot oven, who can resist eating a muffin or two. I think the cold weather at this time of the year, makes hot baked treats taste particularly good! So why not bake some for yourself!
White Chocolate & Macadamia muffins
Ingredients: 2 cups of self-raising flour, 2/3 cup caster sugar, 250g white chocolate chopped roughly, ½ cup toasted macadamias chopped roughly, 60g melted butter, ¾ cup milk, 1 egg lightly beaten
Steps: Preheat the oven to 190 degrees Celsius. Grease with butter or line with patty cases a 12-hole muffin tin. Sift the self-raising flour into a large bowl. Add the sugar, chocolate and macadamias. Stir in the butter, milk and egg and stir to combine. Spoon mixture into the muffin tins, then bake in the oven for 25 minutes. Serve hot or cold!
