White Chocolate Chip and Macadamia Cookies! With White Chocolate Chips and White Macadamia nuts, what cookie could possibly exist that is whiter? Not many I should think. I tend to believe that because the white chocolate, macadamia and batter are all so similar coloured, it is very misleading as to how much chocolate each cookie contains. It may seem like there is no chocolate visible, but one bite and you’re tastebuds will be greeted with a mouthful of chocolatey cookie goodness!


Ever wondered what the real difference between white chocolate and dark chocolate is besides the colour? Well I have found the answer! Yes according to Wikipedia, while dark chocolate is full of cocoa butter/cocoa solids (all things cocoa-like in general), white chocolate DOES NOT contain any cocoa solids at all! Instead it has milk-solids. And hence in some countries white chocolate is NOT considered to be ‘Chocolate’ at all! More like a chocolate fraud! And because white chocolate does not contain cocoa solids, that is the reason why it doesn’t ‘melt in your mouth’ as easily as dark chocolate! Aah! Revelations are great!

White Chocolate Chip and Macadamia Cookies


Ingredients: 125g butter chopped, 1 tsp vanilla essence, 1/3 cup brown sugar, 1/3 cup caster sugar, 1 egg, 1 ¼ plain flour, ½ tsp bicarbonate of soda, ¼ cup roughly chopped macadamia nuts, ½ cup White chocolate bits

Steps: Preheat oven to moderate, 180 degrees Celsius. Beat the butter, vanilla essence, sugars and egg in a small bowl with an electric mixer until smooth. Stir in sifted dry ingredients, nuts and Choc bits. Roll level tablespoons of mixture into balls and pres flat on baking trays lined with baking paper. Bake for 12 minutes or until lightly browned. Allow the cookies to stand for 2 minutes before lifting onto wire racks to cool.

Tip! If you like your choc-chip cookies to have *more visible* Choc- chips, just press a few extra choc-chips into the top of each cookie just before baking!

And nat! i completely agree! So easy to just keep eating one cookie after another... sort of like THE COOKIE MONSTER..lol
