White chocolate and mixed berry muffins

White chocolate and mixed berry muffins
Ingredients: 2 ˝ cups slef-raising flour, ˝ cup white chocolate bits or chopped white chocolate melts, ˝ cup white chocolate melts, 125g butter, ˝ cup soft brown sugar, ˝ cup milk, 3 eggs, 300g mixed berries
Steps: Preheat the oven to 200 degrees Celsius. Grease 12 large muffin hole tins/line with patty cases. Sift the flour into a bowl and stir in the chocolate. Make a well in the centre. Place the melts and butter in a heatproof bowl and melt over a water bath. Cool slightly then add the sugar and milk and beat with electric beaters until well mixed. Whisk in the eggs then pour into the well of the dry ingredients. Fold together gently, then add the berries. Do not overmix. Divide the batter amongst the muffin holes and bake for 20-25 minutes or until a skewer inserted through the centre comes out clean
