Very vanilla cupcakes
A cupcake without icing is like a blank canvas! The more you stare at it, the more you think about the different things you can put on top of it! So many choices! So many colours! Simply so many decisions! Aaaaaah!
And then there are the times when one has absolutely no idea and cannot make a decision! Those *scatterbrain * days! How they creep up on you! I think these are the perfect times to continue to stare at the blank canvas (because it isn’t going anywhere), and in the case of the cupcake, just eat it simply as it is and enjoy its very vanilla goodness! The vanilla sugar really enhances the vanilla flavour in these simple cupcakes! And I guess if you do happen to feel the creative bug bite you, you can always decorate them as you see fit!
Very vanilla cupcakes
Ingredients: 225g self-raising flour, 1 tsp baking powder, 225g vanilla caster sugar, 225g unsalted butter softened, 4 eggs, 1 tsp vanilla essence
Steps: Preheat the oven to 175 degrees Celsius. Place 12 paper baking cases into muffin tins. Place all the ingredients into a medium bowl and beat with an electric whisk until smooth and pale, about 2-3 minutes. (Make sure you scrape the sides of the bowl to ensure it is well combined.) Spoon the mixture into the cases and bake for 18-20 minutes.
