Vanilla ice-cream!

mmmmm…. Delicious vanilla ice-cream! So sweet and creamy and filled with vanilla goodness! Yum yum! Nothing better than making your own when you have time to spare! This is a deliciously dense, rich vanilla ice-cream, fluffy but not filled with air and definitely not lacking in taste if you no what I mean.
Vanilla ice-cream!
Ingredients: 4 egg yolks, 1 tsp vanilla extract, 300g sweetened condensed milk, 500mL thick (double/heavy) cream
Steps: Beat the egg yolks with the vanilla using electric beaters until they are well fluffed up. Then add the condensed milk and continue whisking until well mixed. Whip the cream in a separate bowl until it thickens and forms soft peaks then scrape the yolk mixture into the cream and whisk until well incorporated. Cover and put the bowl in the freezer. After 3 hours remove the bowl from the freezer and give an energetic whisk, then return to the freezer. Whisk again after another couple of hours then freeze again. When it is nearly firm, give it one last whisk then let it set in the freezer until firm.
Makes about 1 litre
