Tuna Rice Casserole
June 28th 2008 08:51
This is one of my favourite recipes. When I first met my husband he always told me, he hated tuna. Then I made him this and he loves it. My one year old will eat it too!
You need:
2 Tablespoons of butter
1 clove of crushed garlic
1 onion diced
½ cup of broccoli chopped finely
1 Tablespoon of flour
1 cup of milk
½ a cup of grated cheese
2 eggs
425g canned tuna, drained
2 cups of cooked long grain rice
Pre heat oven to 180 degrees.
Melt butter in a saucepan over a low heat (this is like making a white sauce you need to melt it carefully so that it does not burn). Add onion, garlic, and broccoli, and cook until the onion is clear. Continue stirring as you add flour. Add milk slowly, while stirring continuously. Continue stirring until mixture is thick. Remove saucepan from heat. Stir in eggs, cheese tuna and rice. Pour combined mixture into an ovenproof dish. Place in oven for 20 minutes or until golden.
