Tomato Salad With Goat Cheese

Salads are great recipes for lazy cooks like myself. They're typically a breeze to make, tastes sensational and packed with nutritional value. This recipe that I'm going to share with you today is a tomato and cheese lover's delight - tomato salad with goat cheese.

Ingredients:
Mesclun or any mixed salad greens (about 1 cup per person)
4 large Tomatoes washed and sliced
Salad Dressing:
2 tbsp minced Shallots
1 tsp Mustard
2 tbsp Vinegar
6 tbsp Olive Oil
8 oz fresh Goat Cheese
Salt and Ground Pepper
4 tbsp Parsley or Basil (chopped at the last minute)
Method:
1) Cover each plate with a layer of mesclun or mixed greens. Place sliced tomatoes on top. Salt generously.
2) Mix the dressing ingredients into an emulsion.
3) Crumble the goat cheese onto the tomato slices.
4) Season with salt and pepper to taste. Pour the dressing on top. Add the chopped parsley. Serve with a slice of country bread.
