Tom Yum Chicken Wings

This delicious recipe (if I must say so myself!) of Tom Yum Chicken Wings combines the flavoursome aroma and taste of lemon leaves, galangal, lemon grass and red chili with chicken wings.
This mouthwatering dish makes a great party snack or served with rice.
Ingredients:
Chicken Wings (20 pieces)
1 Lemon Grass
2 Slices of Lemon Leaves
2 Slices of Galangal
2 Tablespoon of Fish Sauce
1 Lime
1/2 Tablespoon of Sugar
1 Red Chili (more or less according to taste)
1 Tablespoon of Tom Yum Goong Sauce (more or less according to taste)
2 Tablespoon of Oil
Method:
1) Mince lemon leaves, galangal, lemon grass and red chili. Set aside.
2) Squeeze juice from lime. Set aside.
3) Mix the above ingredients with the fish sauce and Tom Yum Goong paste.
5) Heat 2 tablespoons of oil in a wok/pan and fry wings until golden brown on both sides.
6) Switch to low heat and let simmer until wings are well done.
Serve hot and enjoy!
