Stuffed Coke Chicken
I'm a big fan of coke - coca-cola, that is - so when I stumbled across this great recipe that included one of my favourite light beverages I was understandably over the moon!
Never did I imagine combining coke with chicken could ever taste this good and it certainly gives a whole new meaning to when you say to your kids, "I'll let you have a can of coke to go with your meal!".
Ingredients:
1 Chicken (whole)
1 can of Coca-Cola (coke ~375ml)
3 tablespoons of honey
100g Preserved Cabbage
100g Carrots
2 stalks of Celery
1 teaspoon of Salt
1 and 1/2 teaspoon of Light Soy
1 teaspoon of Sugar
Method:
1) Preheat oven at 200 degrees.
2) Wash and drain chicken.
3) Marinate chicken with coke, salt and light soy sauce for 30 minutes.
4) Dice carrots and celery.
5) Stuff chicken with carrots, celery and preserved cabbage and seal with toothpicks.
6) Brush on a thick layer of honey all over the skin and bake for 30 minutes.
7) Remove chicken from oven, apply another layer of honey on chicken, switch oven to 180 degrees and bake for another 15 minutes or until golden brown.
Tip: Did you know that Coke is a great tenderiser of meat?
Serve hot with salads or chips.
