Strawberries and cream ice-cream!

This is one of my most favourite ice-creams in the WHOLE WIDE WORLD!! I l-o-v-e how it has real strawberry pieces melded in with the vanilla ice-cream! It’s so delicious! It just tastes like such an authentic ice-cream, with rich vanilla ice-cream merged with strawberry pieces!

To make this ice-cream you basically make a vanilla ice-cream first then mash frozen strawberries into the almost frozen vanilla ice-cream! And because the strawberries are frozen you don’t really have to worry as much about bruising and squashing them, you can just happily mash/mix away! It’s not only therapeutic, but it also give you a delicious result in the end! Mmmm… this is a definite must try!

Strawberries and Cream ice-cream

Ingredients: 4 egg yolks, 1 tsp vanilla extract, 300g sweetened condensed milk, 500mL thick (double/heavy) cream, 1 punnet of fresh strawberries

Steps: Beat the egg yolks with the vanilla using electric beaters until they are well fluffed up. Then add the condensed milk and continue whisking until well mixed. Whip the cream in a separate bowl until it thickens and forms soft peaks then scrape the yolk mixture into the cream and whisk until well incorporated. Cover and put the bowl in the freezer. After 3 hours remove the bowl from the freezer and give an energetic whisk, then return to the freezer. Whisk again after another couple of hours then freeze again.
Making the vanilla ice-cream

Meanwhile, clean the strawberries then cut into small pieces and freeze separately.

When the ice-cream is nearly firm, give it one last whisk then add the frozen strawberries to the ice-cream and mix them in well. Don’t be afraid to mash some of the strawberries up. Once it is well combined return it to the freezer to let it set until firm.
Add the strawberries and .. tadaa!

Makes about 1 litre
