Spiced Salmon,So long &Thanks for all the fish
Salmon! Who doesn’t like salmon!? Salmon despisers are far and few between. Why? Because it tastes good, it looks good and it’s healthy! Yes, salmon is high in protein, low in saturated fat/cholesterol and is a good source of Omega-3 which is considered *heart smart!*
While we seem to hear a lot about these inexplicable “Omega’s”, what are they really! Basically Omega-3 and Omega-6 are fatty acids, and the right balance between the two enables the body to reduce inflammation, lower blood pressure, prevent irregular heart beats and promote blood flow. Balance is key!
Getting back on track, Salmon tastes good when raw or cooked. This time I’m going with cooked! This recipe is quite different to your regular grilled salmon. The spices do make all the difference! The lemon does however make it a bit tangy, so if you’re not a “lemon person” go easy on the limes.
Spiced Salmon
Ingredients: 4 tbsp olive oil, 1 tbsp ground cumin, 1 tbsp chilli flakes, 1 tsp Cajun spices, juice of 2 limes, 1 tbsp of capers rinsed and drained, 1 tbsp of finely grated lemon rind, 2 tbsp parsley, sea salt, pepper, 2 salmon cutlets
Steps: Put the olive oil, cumin, chilli flakes, Cajun spices, lime juice, capers, lemon rind, and parsley in a bowl and stir to combine. Line a baking tray with foil and lay the salmon cutlets over the top. Spoon the spice mixture over the salmon then cover with plastic wrap and refrigerate for 45 minutes.
Preheat the oven to 180 degrees Celsius and bake the salmon for 15-20 minutes or until cooked to your liking. Serve with rice or steamed couscous.
