Look at that dark green goodness! Like a swamp, but more green, clean and sweet-smelling! This Spinach soup was surprisingly very quick to make and actually full of flavour! I think I have found my new calling in life! “To maketh soup of the thicketh variety by blending ye vegetables”. But do you want to know the best part! Well, I have recently worked out that my daily vegetable intake can be very sad indeed, but if you drink soup which is almost 100% vegetable, then that makes getting your daily serve of vegetables a cinch! When you cook this soup, you will also realise that spinach leaves shrink A LOT during cooking, so use a big bunch of spinach!


Spinach soup

Ingredients: 1 onion chopped, 1 potato diced, 1 bunch of spinach washed and ends chopped off, salt and pepper, water

Steps: Transfer the onion and potato to a large pot and cover 2cm with water. Bring to the boil, then continue to boil until onion and potato is soft (about 15-20 minutes, adding additional water if necessary to ensure the potato and onion are covered). Add the spinach and boil for 5 minutes. Blend the whole mixture in a food processor then transfer the soup back to a large pot. Season with salt and pepper (and add additional water if the consistency is too thick). Serve immediately!

Spicy tomato and fennel soup

With these cold winter days giving everyone a chill, its time for some comforting wholesome food! And nothing beats a mean soup! Especially when it is of the thick, flavoursome variety, like this Spicy tomato and fennel soup! Roasting the vegetables in the oven really brings out a lot of flavour in the soup, making it that much more delicious! I can safely say before making tomato soup, I had some doubts on how tasty such a soup could be. ‘Would it be one of those soups that looked exciting because of its colour but then turned out to be bland?’ This was one of my worse fears. But “post-soup making” I can happily say that this is a v-e-r-y delicious soup, which I will definitely make again!

A favourite in Asian countries, Sweet and Sour Soup and Hot and Sour Soup are a delicious addition to any Asian meal, the sourness of the soup cutting through some of the oily dishes typically served in Chinese cuisine.

I've noticed that my Asian friends often replace drinking water or tea with a bowl of soup... yes, in fact, when we go out to eat, I'll offer them a glass of water, and they'll inevitably reply: "No thanks, I've got this soup

It’s almost like Summer decided to pack its bags this year and go on vacation, leaving Winter to take over and wreak havoc all over the country! You know how some days you just wish you were in another country? Say like Japan for instance? With their Harajuku girls, super-fast trains, Mt. Fuji, plentiful ski slopes of powdery white snow and of course endless mountains of sushi! Yes. Daydreaming is indeed fun.

With all this cold weather at the moment I can safely say that there is nothing better than soup to warm you up. We all know I like to exaggerate, but seriously, yesterday it was so windy I really did feel like I was going to get blown away! Umbrellas were turning inside-out left, right and centre, which was just slightly unfortunate for their respective owners. And there appears to be periodic torrential rain throughout the day! What gives? The sky apparently.

“Garcon! Garcon! I think there is a ..how do you say … fly.. in my soup!” (Waiter looks horrified then proceeds to stare at aforementioned soup.) “Oh no Monsieur! Not a fly!... Look at those stripes! It is a bee!” But don’t worry folks! No bees in our soups today for us! No! Just plenty of onions! Millions of onions! Onions for me! Millions of onions! Onions for Free! Or as the French say Oignon! But let’s not get sidetracked just yet.

One legend about the origins of French onion soup is that late one night King Louis XV of France returned to his hunting lodge, to find only onions, butter and champagne in the kitchen. Ingeniously, he mixed them together and created the first French Onion Soup. Another tale, attributes the origins of French onion soup to the farmers in Les Halles, the old market place of Paris, where farmers would sip on huge mugs of boiling onion soup to keep warm while setting up for the mornings activities in the fierce cold. I think I prefer the story with the champagne! It sounds like it has more imaginative bubbles.

The age old question, “Why did the guy make Cream of Mushroom soup?” Because he was a fun-gi or more importantly a fun guy! Haha. Or maybe, because it was a cold winter’s day, and he was the only person cooking, everyone immediately thought he was fun and cool! Whatever the reason, cooking is the way of the past, present and future!

Surprisingly or maybe unsurprisingly, because mushrooms are very tasty and flavoursome, it is unnecessary to add vegetable/chicken stock to the soup. However if you’re a fan, go ahead and replace the water with stock.

At last! I have discovered the secret to why Japanese women don’t get fat! It’s all in the soup or more importantly the seaweed. Seaweed soup is so simple to make, low in fat and yet so tasty! The seaweed and rice wine combination really is a hit! It’s not as salty as miso soup either. And it is also very warming, so it is perfect to have now during these cold winter times.

Seaweed contains many minerals including sodium, calcium, magnesium, potassium, chlorine, sulphur, phosphorous, iodine, iron, zinc, copper, selenium, molybdenum, fluoride, manganese, boron, nickel and cobalt. What a list! However it is more commonly known for being a good source of iodine as well as being one of the richest plant sources of calcium. It also contains Vitamin B12, which is not found in most land plants.

Simple Potato and Leek Soup!

Potato and Leek Soup
This soup has quite a mild flavour, but the white pepper really helps to bring out the leek. And unlike the French Vichyssoise, this Potato & leek soup is vegetarian friendly as it uses vegetable stock instead of chicken stock!

An interesting legend I read at Food tales about the origins of the old Leek, is that back in the day- 640 AD that is- during the invasion by the Saxons, King Cadwallader ordered his Welsh soldiers to identify themselves by wearing the leek vegetable on their helmets in an ancient battle against the Saxons that took place in a leek field.

What do you get if you put Popeye on a tropical island with his favourite vegetable? Spinach and Coconut soup of course! Aah! The glory days of Popeye the Sailor Man and his beloved can of spinach! Remember the jingle! “He’s strong to the finish, cause he still eats his spinach, he’s Popeye the Sailor Man!”

While Spinach is not as magical as Popeye would have you believe, it is still very good for you! It is rich in carotenoids which have antioxidant properties, as well as Vitamin A, K, folate and minerals- Magnesium and Manganese. And to get the full benefit of spinach, you should cook it as this makes the antioxidant carotenoids responsible for spinach’s nutritional potency, much easier for the body to absorb!

Yes, even old folk tales have alluded to the great promises a good pumpkin can hold. However it was not until recently I realised just how good they are!
