Smoked Salmon & Lime Avocado Salsa
When the sun is out you know what you need? No not sun-cream and hats (although they are a good idea.) You need to do a little Salsa! Yes not just any Salsa, but Smoked Salmon & Lime Avocado Salsa! It is great for a light lunch and the lime and avocado harmonise surprisingly well together. The Smoked salmon really helps to balance the stronger red onion flavour and tastes great with the avocado (although this is no new fact, as we all know how good Salmon and Avocado Sushi tastes). And not only is it fast and easy to whip up but this salsa is also healthy for you too! Don’t you just love it when food is not only tasty but healthy as well! Tasting great healthy food really helps you to re-think all those greasy fast-food outlets which are staring at us in the mainstream media. And who knows you might even be inspired to start Salsa dancing after this, because you can never get too much Salsa!
Smoked Salmon & Lime Avocado Salsa
Ingredients: 1 diced ripe avocado, 1 finely chopped Lebanese cucumber, 1 small red onion finely diced, 1 large handful of continental parsley, 2 tsp fish sauce, ˝ lime, 4 tbsp olive oil, 200g Smoked Salmon.
Steps: Put 1 diced avocado in a large bowl. Add the cucumber, red onion, and continental parsley, fish sauce, and olive oil. Squeeze the juice from the lime, then gently toss to mix, being careful not to mash the avocado.
Serves 4
Tip! For a more *zingy* salsa (who doesn’t need a little more *zing* in their life), you will need 2 large red chillies and an additional lime. Using a sharp knife cut the top and base off the lime. Sit the lime on a chopping board and run the knife down all sides, removing the skin and pith. Run the knife between the membranes to release the lime segments then finely chop them and gently stir them into the salsa. Finely chop the chillies and sprinkle over the top.
