Simply Mushroom Omelette
Okay! So sometimes cooking seems too tough and life in general seems impossible, so it is important to have simple and yet tasty food to fall back on. And what better food to have as your rock, then the humble omelette. You can get eggs almost anywhere! All you need to do is whisk and fry!
And if that doesn’t convince you, even Mark Darcy from Bridget Jones knew how to cook up an omelette, and that’s what carried Bridget’s dinner party through! Blue soup and all! You can put pretty much anything into your omelette! Improvisation is absolutely okay! So why not eat an omelette today!
Mushroom Omelette
Ingredients: 2 tbsp olive oil, 2 mushrooms cleaned and sliced, 2 eggs, salt and pepper, salad to serve
Steps: Add the olive oil to a medium fry pan, add the mushrooms to the pan and gently sauté on medium-high heat, on both sides to cook. Whisk together the eggs in a small bowl, add salt and pepper to taste, whisk and then add the egg mixture to the pan, moving the pan to ensure the egg mixture is distributed evenly. Cook for 2 minutes or until you can see the egg mixture is starting to dry up, then flip half the omelette over, and cook until golden! Serve hot with a side of fresh salad greens.
Makes 1 omelette
Tips! It’s easy to tell whether a mushroom is cooked or not, as they change colour and appear more translucent when cooked.
