Simple baked peach with crumble
So easy and yet so delicious! At first glance these little dessert delights either look like (a) a muffin; (b) a cupcake or (c) random baked good- however these desserts are 90% fruit- the fruit being obviously the peach which so cleverly disguises itself as a muffin-like entity! Truly amazing even if I do say so myself!
I love how the crumble is so crunchy and yet the peach is so soft and sweet! And you really must eat it with ice-cream I feel, as the hot and cold flavours just make it taste that much better! I would recommend that you serve this dish hot and freshly baked, otherwise there is the chance that your crumble will no longer be deliciously crunchy.
Also, take care when handling the peaches after they are baked as they are very hot, and if you do not pick them up carefully (with utensils of course) when transferring them to a serving dish, the crumble will *crumble* itself everywhere, which would be a real shame!
Baked peach with crumble
Ingredients: 2 ripe peaches, 20g butter, ¼ cup plain flour, ¼ cup rolled oats, 1 tbsp caster sugar, icing sugar for dusting and ice-cream to serve!
Steps: Preheat the oven to 200 degrees Celsius. Cut the peaches in half and remove the seed, then place on a baking tray lined with baking paper. Rub the butter and flour together in a small bowl using fingertips until the mixture resembles fine breadcrumbs, then mix in the sugar and rolled oats. Firmly pack tablespoonfuls of the crumble mixture onto the tops of the peaches.
Bake in preheated oven for 20-30 minutes or until the crumble in golden. Dust with icing sugar and serve hot with ice-cream!
