Pan-fried Coral Garoupa Filet


Fish is very easy to prepare, tastes great and is healthy (rich in Omega-3). So if you want to beat the risk of heart attack, strokes and so on, eat fish regularly and enjoy all the goodness it brings!

Ingredients:

2 Slices of Coral Garoupa
1 tbsp of White Wine
1 tsp Ground Black Pepper
Salt & Pepper (season to taste)
A pinch of Flour


Sauce:

30g Butter
20g Fresh Cream
Salt & Pepper
4 Red Cherry Tomatoes
4 Golden Cherry Tomatoes
4 Black Olives
A pinch of herbs

Method:

1) Section cherry tomatoes and olives in half.


2) Cut fish into two slices; marinate with ground black pepper, pepper, salt and white wine for 10 minutes. Coat both sides of filet with flour.

3) Heat olive oil in pan, fry filets till well done and set aside.

4) Heat butter in pan, fragrant herbs, add cherry tomatoes, black olives, stir-frying briefly. Switch off the stove, add fresh cream, pepper and salt, season to taste. Pour sauce over filet before serving.

Mmmmmmm… Sushi goodness! Deliciously tasty and nothing better than a little *too much* wasabi to unblock those nasal passages and send your tearducts into the rainy season! This is a basic recipe for a Tuna Sushi Roll. The key ingredients to have here are the right type of rice and the Japanese vinegar! Without them you can say “bye bye” sushi! It is also important to have a bamboo rolling mat; they are inexpensive to purchase and really do wonders in helping you to achieve that perfect sushi roll! And who doesn’t strive for perfection?

You know that song “All you need is love.. love.. love is all you need”. Well I think it should be changed to “ All you need is scallops… so delicious.. scallops is all you need”. No joke. Scallops have got to be one of the friendliest seafood’s around. Simple to cook! The taste is simply mouth-watering! And there isn’t all that scary cleaning required unlike their Muscly friends. Indeed, since you buy the scallops already opened and rearing to go, you don’t even have to fear the prospects of what you may find when their shell opens, as thankfully, it is already opened!
When buying scallops, look for flesh that is moist looking, and not dry. The flesh should have a clean white colour. Fresh scallops, roe on, in the shell are just the best. And scallops also freeze exceptionally well and lose little in the defrost. Which is a handy thing to know for all you scallop adorers out there!

So it turns out that not all cocktails are alcoholic! And I’m not talking about mocktails! No. I’m referring to the very friendly, very simple and very easy and fast to make, Prawn cocktail! Sure you can’t drink it (I’m sure the word prawn was a dead giveaway), but it is tasty and super easy to whip up! Perfect for those hot days when you really can’t be bothered to be hammered up in the kitchen all day long!

I like Muscles! Haha. But after cooking 2 KILOS of Mussels, I’m not too sure whether I really like Mussels that much anymore! If you haven’t cooked mussels before, then you should definitely put it down on your “to do” list before you get too old! It is definitely AN experience! I’m not too sure I want to repeat it anytime soon, not because the mussels didn’t taste great (because they did), but because of the unbelievable amounts of effort entailed in preparing the mussels for cooking as well as the shocking surprises in stall! It only takes two minutes to cook them but the cleaning seems to take forever!

Aah delicious delicious prawns! Spiced with the full-potency chilli known as peri peri (or piri piri) used often in South Africa and parts of India! I have to admit when I first looked at my peri peri spices I was just a tad frightened. They look SO hot! There are visible chilli flake chunks in the blend of spices. Not to mention the word “HOT” is emblazoned on the front of the peri peri spices. And for those wondering what is actually IN peri peri, it is a blend of chilli, paprika, cumin, salt, ginger, lemon.

Bloody Mary! Bloody Mary! Bloody Mary! Yes it can be said in many different situations! Cocktail hour! Annoying friend! Even Oysters! But just don’t say that thrice at midnight, in the bathroom whilst staring at the mirror, because I hear she comes out of the mirror! Yes very scary thought indeed!

And with that thought in mind, you’re thinking how good can it really be? After all it is still just an oyster. Oh! Believe me! The vodka tabasco puts the kick in Bloody Mary. Not actually as sour as people would lead you to believe, but that kick after, it’s a winner! Similar to the addictive properties of wasabi- where you know if you have too much you will get shooting pains through your sinuses and uncontrollable tears, but you still want more anyway! Everyone secretly wants to live on the edge!

What great weather we had today! Sunny and warm and perfect … for eating prawns! I never realised how easy and fast it was to cook prawns until I grilled these prawns! And I will never cease to be surprised at how home-made cooking tastes infinitely better! I have never in all seriousness tasted a garlic butter which tasted as good as this one! Forget about the prawns, I’ll just eat the garlic butter alone! It’s just so tasty! Who needs bread, when one feels like they could live on butter alone?

Salmon cooked to perfection!

Salmon! Who doesn’t like salmon!? Salmon despisers are far and few between. Why? Because it tastes good, it looks good and it’s healthy! Yes, salmon is high in protein, low in saturated fat/cholesterol and is a good source of Omega-3 which is considered *heart smart!*

While we seem to hear a lot about these inexplicable “Omega’s”, what are they really! Basically Omega-3 and Omega-6 are fatty acids, and the right balance between the two enables the body to reduce inflammation, lower blood pressure, prevent irregular heart beats and promote blood flow. Balance is key!

Squid hanging around in the sun!

Don’t be deceived by the simple name. Salt and Pepper squid is just so tasty and just a tad spicy to make you constantly want to have “just one more piece”. I was inspired into making this dish after tasting the addictive Salt and pepper squid at the Chinatown Autumn Night markets. It really is addictive! I’m sure after tasting it; you too will be wishing that those giant squid which are rumoured to be over 20m in length really were more common!
