Onion and Shrimp Cup Cake

July 9th 2008 02:29
Onion and Shrimp Cup Cake

The Onion and Shrimp cup cake is the perfect appetiser and easy to make (as per most of the recipes I have shared with you all). Combining the wonderful flavours of onion, capsicum with shrimps and eggs, the texture of these ingredients contrasts well with each other to create something that is tasty yet light enough to be served before mains.

Ingredients:

50g Shrimps
1/2 Onion
50g Chestnut (diced)
1 Red Capsicum
80ml Milk
2 Eggs
30g Flour
1 tsp Mustard Powder
1 tbsp Butter
A pinch of Salt

Method:

1) Mince onion and dice red capsicum.

2) Melt butter and fragrant shrimp, onion, capsicum and chestnut over medium heat. Set aside.

3) Preheat oven at 180 degrees Celsius.

4) Add a little milk (slowly) to mustard powder and mix well before adding the remaining milk.

5) Beat egg, combine with milk, add all other ingredients and fill baking cups.

6) Bake in oven for 15 minutes and serve hot.

Vegetables with Garlic-scented Miso Sauce

Miso is one of my favourite Japanese flavours and is created by adding salt and yeast to steamed soybeans and letting it ferment and ripen. Varying the salt content and duration of the ripening process creates different types of either white or red miso while rice, barley and bean miso varieties are made depending on the yeast used.
