Stuffed Tenderloin with Foie Gras and Bacon

Aussie beef are amongst the best in the world - succulent, tender and full of natural flavours. It's not uncommon to find Australian beef - sirloin, tenderloin etc. - selling in overseas supermarkets for 4-5 times the price we pay here, not to mention the exorbitant sums of money a nice piece of Aussie steak would set you back at a restaurant.
We should be grateful for our high quality beef and here's a delicious recipe - Stuffed Aussie Tenderloin with Foie Gras and Bacon - to remind you so.
Ingredients:
2 x 250g Australian Tenderloin
2 x 60g Foie Gras
2 slices of Middle Bacon
Method:
1) Make a small cut on the side of the beef tenderloin and stuff the foie gras inside.
2) Wrap the beef with bacon.
3) Add a pinch of salt and pepper (to taste).
4) Pan-fry both sides of the beef tenderloin lightly over high heat.
5) Remove the beef from pan, put in oven, and bake for 2 minutes under 250 degrees. Serve hot.
