Refreshing green salad with balsamic vinegar dressing
You know how sometimes you just feel so unhealthy. Usually this pivotal moment hits after you’ve gorged yourself on fifty mini Easter eggs or a bar of chocolate and then you’ve finally realised that you’ve eaten the whole pack in one sitting. The keyword being sitting, because that’s right, you forewent your exercise to sit back and eat that chocolate. And then you probably basked in some self-pity! *slap* Get your act together you tell yourself!
Well now you can, with this deliciously refreshing green salad with balsamic vinegar dressing. No longer do salads need to be plain and boring when you can dress them up at the least with this simple balsamic vinegar dressing! So much green, green vegetables is bound to make even the most unhealthy person feel healthy (if only temporary).
Green salad with balsamic vinegar dressing
Ingredients: 200g mixed baby salad leaves, 50g baby spinach leaves, 1 large tomato diced, ˝ a red onion sliced thinly, 2 tbsp balsamic vinegar, good quality extra virgin olive oil
Steps: Wash the salad leaves the mix together the salad leaves with the baby spinach. Add the red onion and tomatoes. Whisk together the balsamic vinegar with three times its volume of olive oil in a small bowl, then transfer the balsamic vinegar dressing to the salad leaves and toss! Serve immediately.
Tip! Add the dressing just before serving to prevent the salad leaves from getting soggy.
