at Lara’s - Liqueur Infused Teacake
A quick and simple cake but with a twist of alcohol! I love varying recipes from the norm
Here’s a really quick dessert or snack.
What you need:
2 tablespoons of butter
2 eggs
1 cup wholemeal flour
1 teaspoon of baking powder
1 ½ tablespoons of brown sugar – this might seem little but the Kilkenny cream and chocolate liqueur adds to the sweetness
½ cup of Kilkenny Cream
1/3 cup of chocolate liqueur
What to do:
1…Pre-heat the oven to 160-170C/320-330F
2…Mix all ingredients together – either by blending with a spatula or with a hand-held beater
3…Pour into a standard-size non-stick loaf pan. Bake for 35-45 minutes, or until golden brown.
Tips…
… insert a kebab stick or knife through the centre of the cake – it's done when it comes out clean
…wholemeal flour may be substituted with all-purpose flour
…you can substitute the Kilkenny Cream with Bailey’s Irish Cream
…add more sugar if you tend to have a sweet tooth
…for a non-alcoholic version, substitute the Kilkenny Cream and chocolate liqueur with ½ cup of milk and if you like generous sprinkles of powdered cinnamon and nutmeg in the mix
