Potato Gratin a la Normande

This savoury recipe of potatoes 'in the style of Normandy' with fresh apples and cheese is simply delicious and makes the perfect autumn lunch.
Ingredients:
18 oz Potatoes peeled and sliced thinly
1 oz Walnuts (chopped)
3 Granny Smith Apples, peeled, cored and cut into 8 pieces each
2 tbsp Unsalted Butter
7 oz Sour Cream or Creme Fraiche
1 Pont Eveque Cheese
Salt and freshly ground pepper
Method:
1) Preheat oven to 375 degrees.
2) Cook the potatoes in slightly salted boiling water for 8 minutes, then drain.
3) While potatoes cook, warm a non-stick frying pan and toast the walnuts for a minute or two over medium heat. Crumble and reserve when cool.
4)Melt the butter in a frying pan over medium heat.
5)Add apples and let brown for 3-4 minutes while stirring.
6)Cut the crust off the cheese and slice the cheese thinly.
7)Butter a rectangular baking dish, and cover it with a layer of potatoes, apples, cheese and a sprinkle of walnuts.
8)Continue layering until all the ingredients have been used. Top with sour cream, season with salt and pepper to taste, and bake in the oven for 30 minutes.
