Penne all’arrabbiata with bacon
Delicious! Absolutely delicious! You know how there are just some pasta dishes that you always eat for some reason! Well this is one of them! I think the hint of chilli gives what would otherwise be a rather ordinary tomato sauce, a real kick! And it doesn’t hurt that it contains bacon too, which is full of flavour! Don’t be scared of the chillies, because this really is mild! I would say that if you are an avid chilli lover you could easily add twice as many chillies, however don’t overpower your sauce with chilllies.
I love tomato-based pasta sauces! They’re so much lighter than the cream sauces, and are definitely healthier! For this pasta, I cut both my tomatoes and bacon fairly chunky so that you could get a real bite out of the sauce as it adds some texture. All in all, this dish is definitely a keeper!
Penne all’arrabbiata with bacon
Ingredients: 300g Penne, 4 garlic cloves peeled and chopped finely, 4 red chilli’s chopped, 470g Tomato puree, 3 tomatoes chopped roughly, extra virgin olive oil, 4 rashers of bacon cut roughly.
Steps: Heat 3 tbsp of olive oil in a thick-bottomed pan. Add the garlic and fry gently. Adter 1 minute, add the chillies then continue to fry until the garlic is lightly brown. Add the bacon and fry until brown. Add the tomato puree and chopped tomatoes then cover and simmer on low heat for 20 minutes.
Meanwhile, cook the Penne in boiling salted water until al dente (usually takes about 8 minutes). Drain the pasta then add it to the tomato sauce and toss to coat the pasta. Serve with parmesan!

i'm a HUGE lover of pasta. hubby said we pretty much have the stuff to make this. so maybe we'll have this for dinner, and then the tarts for desert.
