Pear and Raspberry bread
Oh my! If you like Banana bread! Then you will l-o-v-e this Pear and Raspberry bread! SO delicious!!! (Note the use of Multiple exclamation marks!) I l-o-v-e eating it! It’s really simple to make *tick*! It’s sweet and delicious *tick*! It contains REAL fruit (wow this is starting to sound like a roll-up ad) *tick*! And it is just SO good! I think it definitely makes studying easier! Because when your tastebuds are happy, your brain by default becomes happier and thus more permeable to knowledge! Haha. And don’t you dare say anything bad about it until you’ve given it a try!
Pear and Raspberry bread
Ingredients: 1 ½ cup self-raising flour, pinch of salt, ½ tsp bicarbonate of soda, 1/3 cup brown sugar, 1/3 cup raw sugar, 1 pear (peeled and cored) thinly sliced, ½ cup raspberries, ½ cup pecan nuts roughly chopped, 1 egg, ¾ cup vegetable oil, 1/3 cup milk
Steps: Preheat oven to moderate, 180 degrees Celsius. Sift together the flour, salt and bicarbonate of soda into a large bowl. Stir in the sugar and pecan nuts. Beat together the oil and egg and then transfer to the large bowl, mix to combine. Add the milk and stir. Add the raspberries and pear and stir until just combined.
Transfer the mixture to a greased loaf tin 23 x 12cm and bake in a moderate oven until lightly browned for about 50-55 minutes. Leave to cool in tin. Cut into thick slices to serve!
