Peanut butter & chocolate-chip muffins!
Yes it is true! I did indeed bake MORE muffins! Today it was Peanut butter & chocolate-chip muffins! The main factor spurring on this baking expedition today, was my insatiable craving for peanut butter. That deliciously golden spread, which many of us just cannot get enough of! Sure it is high in fat, but at least it is not fried. Well in any case, that is the story I am sticking to. An interesting fact is that the humble peanut is not in fact a nut at all, but a member of the legume family (famously known for its many beans).
Back to the muffins! I used smooth peanut butter in my recipe as to my horror, when I looked in the pantry; there was hardly any crunchy peanut butter left. However, I would recommend using a crunchy peanut butter as it gives the muffins a more peanut flavour and texture! However if you discover you only have smooth peanut butter left, don’t worry, because the muffins still tastes delicious!
Peanut butter & chocolate-chip muffins!
Ingredients: 2 cups of self-raising flour, 2/3 cup caster sugar, 1 cup milk chocolate chips, 60g melted butter, ¾ cup milk, 1 egg lightly beaten, 3 tbsp peanut butter
Steps: Preheat the oven to 190 degrees Celsius. Grease with butter or line with patty cases a 12-hole muffin tin. Sift the self-raising flour into a large bowl. Add the sugar, and chocolate chips. Stir in the butter, milk and egg and stir to combine. Stir in the peanut butter. Spoon mixture into the muffin tins, and then bake in the oven for 20 minutes or until golden and a skewer inserted through the centre comes out clean. Serve hot or cold!
