Need some more passion in your life? Are the days just becoming a bit too long, with one endless routine after another, draining your energy away? Well, then you need to pep yourself up! And what better way than with delicious Passionfruit ice-cream!
I love eating this passionfruit ice-cream! It is very refreshing and the lemon helps give the sweet passionfruit a little bit more *zing*! Also surprisingly, the addition of six passionfruit may sound like a lot, but it isn’t overpowering at all!
This recipe is also ideal if you should be studying for exams, because you mix then freeze for a couple of hours (ie. Study time), then you whisk again and freeze (study time), and whisk and freeze… you get the point. So the whisking coincides perfectly for those much needed, mid-study breaks! And then at the end, you have delightful passionfruit ice-cream goodness to greet you!
Passionfruit ice-cream
Ingredients: 250 mL (1 cup) pouring cream, 250 mL (1 cup) milk, 230g caster sugar, grated rind of 1 lemon, juice of 1 lemon, pulp of 6 fresh passionfruit
Steps: Put the cream, milk and sugar in a bowl and stir until the sugar has dissolved. Then transfer to a 1L capacity ice cream container. Cover and freeze. After an hour, remove the bowl from the freezer, give an energetic whisk and return to the freezer. After another2 hours whisk again, this time whisking in the lemon rind, juice and passionfruit pulp. Return to the freezer and freeze for 6 hours or overnight (recommended) until it is firm.
Alternatively, pour the mixture into your ice-cream machine and freeze, following the manufacturer’s instructions.

I've come across a few recipes which make use of an ice cream maker but I don't have nor would want one.
I'm gonna make this for my mum, passionfruit ice cream is something she'd love. Thanks a bunch.
