Wholesome organic oat cookies

On my visit to my local Macro store yesterday I had the greatest Chai tea and Oat cookies and was immediately inspired to make my own! Oat cookies aren’t as sweet as your regular choc-chip variety and tend to be a softer cookie. They do however taste very ‘oatey’ for lack of a better word, which is understandable as they are after all Oat cookies. They also taste very organic and wholesome in general as well, which I think is due to the overall ‘oatey’ taste. You could be forgiven for forgetting that they were even cookies. So get on the organic bandwagon and treat yourself to Oat cookies today!
Oat Cookies
Ingredients: 1 cup organic wholemeal self-raising flour, 3 cups organic rolled oats, 60g butter, 1/3 cup brown sugar, ¼ cup golden syrup, ¼ cup milk
Steps: Preheat oven to moderate, 180 degrees Celsius. Sift flour into a large bowl. Blend oats in a food processor for 1 minute or until finely ground, then add to the flour. Rub butter through flour mixture using fingertips until it resembles breadcrumbs, then stir in brown sugar using a wooden spoon.
Combine golden syrup and milk in a small pan over low heat until mixture is smooth then add to the flour mixture and mix. Roll tablespoonfuls of mixture into balls, press lightly and place on baking trays lined with baking paper. Bake for 10 minutes or until lightly golden.
Makes about 24
Tip! If you find it difficult to roll the mixture into balls because your cookie mixture is too dry, then just add a little more milk. This will make the mixture stickier and help it to combine better.
