There’s always more room for Mushroom quiche!
Finding cooking to be a chore? Tired of consulting those recipe books with endless lists of ingredients and directions? You know what you need! An easy peasy (maybe not japanesey) recipe! And have I got the answer? Of course! Mushroom quiche! So tasty and so easy to make! The filo pastry makes this quiche very light as does the use of milk instead of cream. So it is perfect to have as a light lunch accompanied with salad! And because it is so easy to make, and hence leaves us plenty of spare time, this provides the perfect opportunity to unleash our Mushroom Joke side! *drum roll please* You know it has got to be good if there are drums involved.
Okay! Okay! Why did the mushroom go to the party? Because he was a fun guy! Why did he leave the party? Because there wasn't mushroom!

Client: ‘Cluck! Cluck! Cluck!’
Waiter brings chicken soup
Client: ‘I don’t want chicken soup. I want mushroom soup!’
Waiter: ‘Why did you make the noise like a chicken then?’
Client: ‘Because I can’t make a noise like a mushroom!’

Mushroom Quiche
Ingredients: 4 large mushrooms sliced, ½ cup tasty cheese, ½ cup mozzarella cheese, 1 cup milk, 4 eggs, 8 pieces of filo pasty, olive oil spray, salt and pepper
Steps: Preheat the oven to moderate, 180 degrees Celsius. Spray a 25 cm flan dish with olive oil. Place filo pastry sheet in criss cross fashion over flan dish and spray each sheet generously with olive oil. Tuck in sides of filo pastry. Slice mushrooms thinly and spread on top of filo pastry. Sprinkle evenly the mozzarella and tasty cheese over the mushrooms
In a medium bowl beat the eggs, milk, salt and pepper together, then pour over mushroom and cheese mixture, ensuring it is evenly distributed. Bake for30-40 minutes. Serve hot!
Serves 4-6
