Simple Miso Soup
You know how some days you just wish you were in another country? Say like Japan for instance? With their Harajuku girls, super-fast trains, Mt. Fuji, plentiful ski slopes of powdery white snow and of course endless mountains of sushi! Yes. Daydreaming is indeed fun.
With all this cold weather at the moment I can safely say that there is nothing better than soup to warm you up. We all know I like to exaggerate, but seriously, yesterday it was so windy I really did feel like I was going to get blown away! Umbrellas were turning inside-out left, right and centre, which was just slightly unfortunate for their respective owners. And there appears to be periodic torrential rain throughout the day! What gives? The sky apparently.
So on this gloomy day I decided to embrace Miso soup! I love how it is so easy to make! It does after all only have 3 ingredients, ANYONE can make it! So nice and simple! And a perfect way to warm up on a cold windy day!
Miso Soup
Ingredients: 1 potato diced finely, ½ small brown onion finely sliced, 4 cups water, 4 tbsp soy bean paste
Steps: Place potato, onion and water into a medium-large pot. Bring to the boil and then simmer for 10 minutes or until potato is soft. Add the soy bean paste, bring to the boil again and then serve!
Serves 4
