You Fool Mango Fool
“Good lord, it’s 5 AM, why in the world are you cooking now, you fool!?”
“As a matter of fact, it turns out I’m whipping up, Mango Fool this morning!”
“No you fool, its called Mango Fool”
“Ohhhh………… I’m going back to sleep…”
That’s the kind of conversation you have when people wake up too early in the morning. Too many fools around. However, Mango fool is great to have as a dessert (or breakfast if you are that way inclined), especially with all this hot summer weather making hot desserts, particularly less appetising. And with mangoes now coming into season! It’s very simple to whip up, and it tastes great, mainly due to the fresh mango present. mmmmm.... yum!
Mango Fool
Ingredients: 2 mango, 400mL custard, 500mL single pouring cream, 2 tbsp caster sugar
Steps: Peel and de-seed the mango, then process in a food processor until a smooth puree. Add the custard and blend to combine. Separately, whip the cream and caster sugar together until just fluffy, then fold the mango mixture and cream together to get a marbled effect. Do not over-mix.
