Indulgent Glazed Chocolate Cupcakes
So there I was sitting with my morning coffee when I realised something was missing! Then suddenly, I was overwhelmed with a chocolate craving. But to my horror our house appeared to be lacking in anything of the satiable chocolate variety. What to do? What to do? This was a telling moment, and I knew it was Chocolate Cupcake time!
These chocolate cupcakes are so moist and rich! Just heavenly! Not that I’ve been to heaven, but I imagine if it was a Utopian kind of place , then people would be eating this type of chocolate cupcake pretty much all the time! Soft, rich and fluffy! The way cupcakes are suppose to be! Not hard volcanic rocks! So what are you waiting for? Baking time!
Rich Chocolate Cupcakes
Ingredients: 100g good-quality dark chocolate chopped, 100mL milk, ¼ cup cocoa powder sifted, 100g butter softened and cubed, ¼ cup caster sugar, ¼ cup icing sugar, 2 eggs, 1 cup self-raising flour sifted.
Steps: Preheat oven to 180 degrees Celsius. Place the chocolate, milk, and cocoa in a saucepan and whisk constantly over low heat until the chocolate is melted and mixture is smooth. Remove from the heat and set aside until mixture is lukewarm.
Using electric beaters beat the butter and sugar in a large glass bowl until pale and creamy. Add the eggs one at a time until well combined.
Add the chocolate mixture to the butter mixture and mix well using a metal spoon. Add the sifted flour in 2 batches and fold through using a metal spoon until well combined.
Put spoonfuls of the chocolate cupcake mixture into cupcake pans lines with paper cases. Bake for 10-15 minutes or until a skewer inserted into the centre of the cupcake comes out clean. Cool cupcakes in the pans
Chocolate glaze
Ingredients: 2/3 cup icing sugar, 2 tbsp cocoa powder, 2 tbsp boiling water
Steps: Place the icing sugar, cocoa powder and boiling water into a small glass bowl and mix together using electric beaters until smooth. Spread on the cupcakes immediately. (Otherwise the glaze will harden)
Makes 18 cupcakes
The only thing possibly wrong with this cupcake recipe is that after eating one cupcake you just feel like eating more! They’re that good!
