Home-made fries!

I have a confession! Despite eating some of the most delicious foods in the world, even if it’s a taste sensation, a mouthgasm if you will, some time later in the near future I eventually get a craving for fries! That’s right! The humble old potato, spud, little tuber, little Frenchy, yes for some unknown reason, every now and then I just feel like eating you! It is rather strange, because I know that French fries aren’t really “good” for you, and I know that they are 100% ‘starchy-carby-not-much-nutri ents-at-all’, and yet I still love eating them!
So I decided to embark on a “make my own fries” adventure because (a) I love fries, (b) if I can make them surely I can have them at ANY time (c) fast food prices seem to be soaring into the sky like there is no tomorrow and (d) who doesn’t love an adventure? With my trusty potatoes in one hand, and the word “French fries” glowing on the horizon, I set off, determined to cook French fries worthy for kings (and queens)!
After hours of slaving away in the kitchen (well actually it was less than an hour, but I tend to get a bit “overdramatic” when I’m in a story-telling mood) I made some of the most delicious fries I’ve ever eaten in my whole life! After they had just been cooked, I literally sat there with my sister and ate them all! It’s true! And you can do it too! It’s so simple I really cannot believe I have not made them before. I must have been living under a rock. Oh well! Good thing the rock decided to move, because “ I can see clearly now that my French fries are here…”
French fries!
Ingredients: 4 large, long potatoes (1.3kg) such as Spunta, Russet Burbanks, King Edward, peanut oil and seat salt
To cook the fries in the oven-Steps: Preheat the oven to 220 degrees Celsius. Scrub the potatoes and cut into long, thin fries. Place in a bowl and toss with a little oil. Place 2 baking trays into the oven and allow to heat for 15 minutes. Cut pieces of baking paper to fit the trays. Keeping the trays as hot as possible, place the baking paper on the trays then sprinkle the fries over. Bake for 20 minutes then turn the fries over using tongs. Bake for a further 10 minutes or until crisp. Sprinkle generously with salt and serve immediately!

Tip! Alternatively, you can fry the fries- although you will need to be very careful because that hot oil really burns-
Steps: Once you have cut the fries, heat enough oil for deep-frying in a saucepan over medium heat; the oil should be at 160 degrees Celsius. Fry the fries in small batches for 3 minutes then place on a tray, and once all are fried, fry them all again for 3 minutes so that they are golden and extra crisp. Drain well on paper towel and sprinkle with salt. Serve immediately.
