Gnocchi romani with tomato sauce!
“Tomato sauce? Huh?!” I here you exclaim! Yes Tomato sauce! I am referring to the authentic type which you make by yourself by slowly cooking tomatoes, as opposed to the bright red one which comes ready-made in sachets or bottles.
Authentic home-made tomato sauce is scrumpt-diddly-ump-tious! Full of flavour and real tomatoes! I love how it is a really thick wholesome sauce too! That’s right! And it complements gnocchi really well, somehow making the gnocchi seem less dense and rich than compared to eating gnocchi alone.
This tomato sauce I paired with gnocchi romani because it was a fairly rich, cheesey gnocchi, however you could use this sauce with any plain gnocchi/pasta if you wished!
Ingredients: 1 quantity of gnocchi romani, 2 x 400g tins of tomatoes, 2 red onions finely peeled and sliced, 2 garlic cloves, peeled and finely sliced, 4 tbsp fresh basil leaves chopped, 50g parmesan grated, extra virgin olive oil
Steps: Heat 2 tbsp of olive oil in a frying pan, then add the onions and cook over low heat until soft and translucent. Add the garlic and continue to cook until the onions begin to colour. Add the tomatoes, then basil, stir, then add salt and pepper to taste. Cover and leave to simmer for 45 minutes, stirring occasionally, until the tomatoes have become a thick sauce. Remove from heat and keep warm.
Cook the Gnocchi romani.
Place the gnocchi on a serving plate, then top with the tomato sauce. Serve hot!
