Glutinous Rice and Pumpkin Pancakes

This delicious chinese recipe is chewy, easy to make and best of all, fat free! Great for a quick, healthy snack!

Ingredients:

300g of Pumpkin
150g of Glutinous Rice Powder
5g of Sugar

Method:

1) Peel and remove the seeds from the pumpkin and steam for 30 minutes until well done.

2) Mash the steamed pumpkin and combine with the glutinous rice powder and sugar. Once all three ingredients are combined, they can be molded into small patties.

3) Add water to pan/wok and steam the patties until well done. Remove.

4) Heat 1-2 tablespoons of oil in a wok/pan and fry the patties until golden brown on both sides.

5) Serve hot and enjoy!
