Germans don't Roast potatoes - they Potato Rosti
Staring blankly into space? Too much time on your hands? You know what you need to make… ze German call it- Potato Rösti! I really stepped out of “the zone” to make this one! While it does taste delicious and gives a whole new meaning to the humble potato, the amount of potato peeling required can be painstakingly tedious! This is not an over-exaggeration. I suggest a good movie in the background while you peel those spuds!
Potato Rösti
Ingredients: 4 roasting potatoes (such as Desiree, Pontiac, Sebago), ˝ cup finely grated parmesan cheese, 2 tbsp lemon thyme leaves, 1 ˝ tbsp olive oil, salt & pepper
Steps: Peel the potatoes and discard the peel. Then, using a sharp peeler peel the potato into long strips. Toss together the strips, thyme, parmesan, olive oil and salt & pepper with tongs in a bowl. Place into piles on a baking tray lined with baking paper. Bake at 200 degrees Celsius for 20-25 minutes or until golden.
Makes 16
Tip! To make peeling the potatoes into long curly strips easier, Cut the potatoes into parallel slices, so that you can peel along the thin edge more easily.
Instead of lemon thyme you can use regular thyme, but the herbs are essential in giving this dish an edge! And fresh herbs just smell so fresh!
