Festive Salad!

SO as we all know Christmas time = celebrations= festive spirit cheer = MUCH FOOD = impending weight gain ...= <later> guilt over what has been eaten = lowering of mood = more eating = vicious cycle!
But never fear, you can still be festive without eating a block of butter a day! HOW?! With Festive Salad of course! Lots of red, green and other friendly colours… well just yellow really! It’s very fresh tasting, which is a pleasant break from the many processed foods around, and it is good to have as a light side dish to a heavy main.
Festive Salad!
Ingredients: 160g fresh snowpea sprouts, 1 red capsicum sliced thinly, 1 Spanish onion sliced thinly, 1 punnet of yellow grape tomatoes cut into quarters, 2 tbsp balsamic vinegar, 4 tbsp extra virgin olive oil
Steps: Combine the snowpea sprouts, capsicum, onion and tomatoes in a large bowl. Whisk together the balsamic vinegar and extra virgin olive oil dressing and then pour over the salad and toss!
Serves 4
