Espresso Cupcakes!
Are you a caffeine addict? Can’t get enough of your daily dose, whether it be in a cappuccino, latte, flat white, mocha, frappe, tea, espresso or even a hairy lemon? Well then, this is just another way to keep you going on your perky, caffeine way! Espresso cupcakes! Yes! As ingenious as it sounds, it isn’t flooded with caffeine like its little beverage friends, but it is full of sweet, coffee flavour! A spongey, light, sweet temptation, that would go very well with your 4th caffeinated beverage of the day!
These cupcakes are really easy to make, you basically let your electric mixer take over for the day, and do all the work for you! Wouldn’t it be great if it could take over the other chores in your life? Too bad all it can do is mix, but mix very well it can, nonetheless! Just don’t get carried away at the end, when you fill your patty cases with the cupcake mixture, otherwise you end up with SUMO-Cupcakes! Don’t worry! They look a little top heavy, but they’re still friendly and tasty!
Espresso Cupcakes
Ingredients: 100g butter softened, 1 cup caster sugar, 3 eggs, 1 ¼ cup self-raising flour, ¼ cup hazelnut meal, 1 ½ tbsp instant coffee dissolved in 1 tbsp boiling water OR 1 espresso shot
Steps: Preheat the oven to 160 degrees Celsius. Beat together the butter and caster sugar using an electric mixer until creamy and pale. Add the eggs and beat to combine. Then add the flour and beat to combine. Add the hazelnut meal and coffee mixture/espresso and beat on high speed until just smooth.
Grease/(line with patty cases) 10 x ½ cup capacity muffin or patty tins, then spoon the mixture and bake for 25-30minutes or until a skewer tested through the centre comes out clean. Cool in tins for 10 minutes before transferring to a rack to cool.

Espresso cupcakes are great, arent they? I actually made some last week and they're the only batch of cupcakes I've been happy with lately.
Now a stand mixer is what I need! A hand one does the job okay but it works against you if you're an uncoordinated person!
