Delicious Vanilla Blueberry & Strawberry pancakes

Nothing better than pancakes to start a sweet day! And OH mY Goodness! These have got to be one of the best pancakes I have ever made! Perfect to make during the summertime because berries are freely available and in season and they taste really delicious! These pancakes are actually sweet enough to eat without maple syrup, but why spare any expense, when you should go all out eating your pancakes!
You may have found in the past whilst eating your pancakes you suddenly reach the *pancake limit*, usually characterised by an overload of feelings of fullness and satiety, declarations that you’ll “never eat pancakes ever again”, and immediately followed by the need to spread yourself out (lie on the ground if need be) just so you can breathe. Well unlike those pancakes, because these Vanilla Blueberry & Strawberry pancakes are packed with fresh berry goodness, the berries help to enhance the flavour of the pancakes without giving you that sickening feeling! Must be all the antioxidants!
Vanilla Blueberry & Strawberry pancakes
Ingredients: 1 cup self-raising flour, ¼ cup caster sugar, 1 egg lightly beaten, 40g butter metled, 150mL skim milk, ½ tsp vanilla essence, 1 cup fresh or frozen blueberries, 1 punnet strawberries washed and sliced thinly, extra butter for greasing, maple syrup and ice-cream to serve!
Steps: Sift the flour into a bowl and stir in the sugar. Make a well in the centre.
Whisk together the egg, melted butter, milk and vanilla and pour into the well and whisk until smooth. Gently fold in the blueberries.
Grease a non-stick pan with the butter and turn the stove top to low heat. Pour approximately ¼ cup batter into the pan and immediately place a few slices of strawberries onto the batter; cook over low heat until bubbles appear and pop on the surface. Turn the pancake over and cook the other side until golden. Serve hot stacks of pancakes drizzled with maple syrup, fresh berries and ice-cream!
Makes 8 pancakes
Tip! If your pancakes are looking a bit dark and black, it means the pan is too hot, so turn the heat down! And ensure that the pan is well greased each time you make a pancake!
