Delicious Caesar Salad
Caesar Salad! A salad fit for emperors some might say! And why wouldn’t it be, when it is brimming with flavour! Of the many salads out and about, I dare say that Caesar salad would be at the top of the popularity list but not necessarily the top of the *healthy* list. Sure it has greens, but it does also have bacon and egg yolks! Aahhh well… the price you pay for tastiness!
Caesar Salad
Ingredients: 1 cos (romaine) lettuce, 1/3 cup shaved parmesan cheese, 6 rashers of bacon, 100g croutons, Dressing: 1 egg yolk, 2 tsp Dijon mustard, 1 clove garlic chopped, 2 tbsp lemon juice, 3 anchovy fillets, ˝ cup grated parmesan cheese, ˝ cup vegetable oil
Steps: Cook the bacon in medium frying-pan on medium-high heat until brown and crisp. Wash and trim the lettuce leaves, roughly chop and add to a large bowl.
To make the dressing, process the egg yolk, mustard, garlic, lemon juice, anchovies and parmesan in a food processor until well combined, then while the motor is still running, gradually add the oil and process until smooth and creamy.
To serve, toss together the lettuce, dressing and shaved parmesan. Then top with the croutons and bacon!
