Cute Mini pear and walnut muffins
Aww… aren’t mini-muffins SO cute!! It’s bite-sized muffin goodness! Why eat one big muffin when you can have several mini-ones!? Sure, if you have giant hands these little muffins will only make you feel like more of a giant, but that’s all part of the fun! No really! They are snack size for your convenience! And I’m sure they would be a welcome addition to any little lunchbox. You could be Un-fun and bake these pear and walnut muffins in a normal sized muffin-tin, however I think that would detract from their popularity. And don’t miss out on the walnuts, as they help to bring out the pear taste! Yum yum!
Mini pear and walnut muffins
Ingredients: 1 brown pear cut into slices, 2 ½ cups self-raising flour, 2 tsp ground cinnamon, 1 cup brown sugar, ½ cup finely chopped walnuts, 1 1/3 cup milk, 2 eggs, 1 tsp vanilla essence, 150g melted and cooled unsalted butter.
Steps: Preheat the oven to moderate, 180 degrees Celsius. Grease 3 x mini-muffin trays. Sift the self raising flour and cinnamon into a large bowl. Add the brown sugar and walnuts and stir together. Make a well in the centre.
Place the milk, eggs, vanilla essence and cooled melted butter into a jug and whisk together, then pour into the well and mix. Add the pear and then fold in gently until just combined. The batter should be lumpy. Divide the mixture evenly among 36 mini-muffin holes.
Bake for 15-20 minutes or until a skewer inserted through the centre comes out clean. Cool for 5 minutes then transfer to a wire rack
