SMARTIE PANTS!

Smartie Pants!
Smartie Pants
Who says that people don’t like a Smartie Pants? Those people obviously only met obnoxious-self-absorbed-think-too-highly-of-themselves-know-it-alls and never tasted a REAL Smarties Pants! It’s the brightest, most colourful, most happy-looking, great-tasting cookie to have ever graced this planet! When you look at one all you can do is smile! Yes smile as if you were an obnoxious-know-it-all Smartie Pants yourself! (No frowns on this side of town). They are absolutely delicious in their just out of the oven, burning-fingers hot stage, but are also great when cooled back to normal temperatures. What I love about this cookie too is that it isn’t rock hard once cooled. It is firm obviously but is still slightly chewy in the centre. (Although if you over-bake the cookies they will be rock hard, and slightly black for that matter).

So why was I suddenly inspired to make Smartie Pants Cookies now? Well I figured, seeing as I have an exam tomorrow (feeling rather under-prepared-sort-of-in-denial at this point by the way), it couldn’t hurt to have some Culinary Courage or Foodspiration for that matter! Possibly these Smartie Pants will make me an INSTANT GENIUS bursting with knowledge! Maybe even you to! But I’m not promising anything. These cookies also make you feel infinitely better about yourself! Indeed I have never felt so much happiness baking before in my entire life! Apparently Smarties not only make you smarter, they make you happier too!

Well that’s enough convincing for me, I think I might have to bake these come every exam time!

Smartie Pants

Ingredients: 125g butter, ½ cup caster sugar, ½ cup brown sugar lightly packed, ½ tsp vanilla extract, 1 egg lightly beaten, 1 ¾ cup self-raising flour sifted, ½ tsp salt, ¼ cup slivered almonds, 180g Smarties©

Steps: Preheat oven to moderate, 180 degrees Celsius. Cream together the butter, sugars and vanilla using electric beaters until combined. Add lightly beaten egg, and beat until smooth. Mix in sifted flours and salt with a wooden spoon. Add slivered almonds and mix until combined. Shape tablespoonfuls of mixture into balls, and place onto a baking tray lined with baking paper. Flatten gently, then press smarties into the surface. Leave about an inch between cookies as they do expand upon baking. Bake for 10-12 minutes or until lightly golden

Makes about 30

Tip! To get the best looking Smartie Pants in town take heed: when you press the smarties into the surface of the cookie dough, try to place the smarties as close together and as many as possible, because the cookies expand A LOT upon baking. If you don’t put enough Smarties, the cookies tend to look a bit sad, a bit lonely, and a bit Smartie-less.

Catch a falling Shortbread Star!

Shortbread Stars
Shortbread Stars

“Catch a falling star and put it in your pocket never let it fade away…” Remember that song? Well catching falling stars is all well and good for some, but just don’t go putting any of these shortbread stars in your pocket, as you will probably end up with a buttery mess. There may not be any fading but there will be a lot of cleaning after.

Caramel Cornflake Cookies!

Caramel Cornflake Cookies!
The Triple whammy! Ask a pharmacist or doctor and they’ll tell you that refers to a patient being on three particular medications (ACE inhibitor, NSAID and diuretic) which has inevitably resulted in renal failure, or in lay-man terms, their kidneys have carked it! And in the medical world is a very bad thing! But in the much more rose-coloured-glasses-delicious world of food, the Triple C Whammy refers to Caramel Cornflake Cookies! And is a very good thing! A very sweet, caramel tasting cookie to be more precise!

I highly recommend these cookies if you have a sweet tooth and love toffee and caramel! You almost feel tempted to eat the caramel by itself! Dearie me! But seriously, what better way to eat cereal? I think cookies for breakfast is the way of the future! Just wait, soon every cereal known to man will have its own cookie equivalent! And I’m not talking about breakfast bars!

Get rid of wrinkles with peanut butter crinkles~!

Peanut Butter Crinkles!
Peanut Butter Crinkles!
“Oh my God! I think I see a dreaded…..wrinkle! I know what I need… a Peanut butter crinkle! (who needs anti-wrinkle cream really) ”Okay it’s a lie! Peanut butter crinkles are not some sort of new miracle cure for wrinkles! *Shame* on you for being so vain! However they are delicious-peanut-butter-enriched-cookies that are “oh so tasty and addictive” that you’re face will light up in delight and all wrinkles will be momentarily softened!

Yes these are not your average peanut cookies which have a tendency to be a bit too hard, are bit too raw-peanuty and a bit too bland. No. These crinkles have a very scrumptious buttery (but not too buttery), sweet-roasted-peanut-melt-in-your-mouth kind of quality. And are a definite MUST for peanut butter fans!!

Colourful Hundreds & Thousands Cookies

Hundreds and thousands cookies
Hundreds and thousands cookies
Hundreds & Thousands Cookies have hundreds and thousands of colours! Not necessarily hundreds and thousands of different colours, but definitely many colours nonetheless. Who said they had to be different colours anyway? Okay, so there are possibly only seven different colours in reality, but there are SO many of them you could almost be tricked into thinking there were really hundreds of colours. Life is so much better with colours! It would be a sad world indeed if it was always to be black and white with a few different shades of grey in between. I wonder what rainbows would look like? Would they even exist?

But back to the cookies! These cookies are very fun! And how could they not be with all those colours! The cookies are fairly light, with a mildly-sweet taste, and despite the minimal amounts of butter still have that buttery home-made biscuit taste which we all love! They’re also very easy to make! It’s like fairy bread meets the cookie man!

Are you a Biscotti lover?

Biscotti
There are two types of Biscotti attitudes. Firstly there are the confessed Biscotti lovers. Needless to say they love their Biscotti, know the minute differences between the various types and often bake their own because “it tastes better!” The other attitude is more blazé in the form of “Biscotti’s okay I guess, but I really don’t understand what the fuss over a rock hard biscuit is? I think they burnt it!” Being a former member of the latter, I never really understood the fuss, until one day, a couple of my friends made it at home. Home-made Biscotti tastes infinitely better than the bought variety and will convert you into a Biscotti lover like that! *finger snap*

Biscotti is Italian for “cracker, biscuit or cookie” and means “twice baked” which is quite logical seeing as you are required to bake it twice. Don’t worry, I too was surprised at how easy Biscotti making can be! And the result is a thirsty, hearty cookie, perfect for dipping in your morning coffee or for crunching on when you need to let off some steam.
