Peanut Butter Cookies

Is it just me or does everyone have that "thank goodness" food that they look forward to? It could be a thank goodness that's over with or thank goodness I saved room for this. Lately I've been in my 'thank goodness it's summer' phase where I've been preparing as many meals with fruit as I can get away with. The other day my husband was having one of those days, you know - when everything that can go wrong will go wrong. Since I was home that day and I knew it was a thank-goodness-this-day-is-fi nally-over day I threw his favorite food, peanut butter cookies.

I've never been much of a peanut butter fan, I think it may have something to do with watching my younger brother eat it by the spoonful when we were young...ick. Or it could have something to do with its oily heavy goo of an existence...either way, it's not often used in my kitchen. When my husband found these cookies on the Betty Crocker website he fell in love, he had to have them (literally that day, not kidding). So I toughened up and bought a jar of Skippy. I was surprised at just how simple this dough is to whip together, even when I ignored the specific instruction to "cover and refrigerate about 2 hours or until firm" (ok, side confession here, I hate doughs that need to be chilled and I will avoid this step if at all humanly possible).

Even though it requires using the oven, these adorable little nibbles are worth baking, even on hot summer afternoons. They are sweet and simple and not too overpowering (plus they're just so cute!). I usually just use a tablespoon to measure out the normal sized cookies, but for my little girl I use teaspoons and they turn out perfectly sized for a quick snack. Enjoy this easy classic cookie recipe.

*drum roll* Legendary bars (I know! Talk about pressure) based on the first American chocolate chip cookie recipe! I would have thought that the first chocolate chip cookie would be rounder and generally more “cookie” shaped, but it would appear that that isn’t the case! Even so, these tollhouse cookies are deliciously soft, in that “traditional-wholesome-cookie” kind of way and a real treat for all! This recipe uses both caster sugar and brown sugar, and I’ve noticed before that when I glance at an ingredients list, it is easy to skim and miss things! So make sure you remember to add both of the sugars! Other than that, it’s a piece of cake! Or more literally, a slice of cookie!

Anzac day- a day of remembering and for celebrating. And one of the things I love most about this day is the eating of the Anzac biscuits! Such sweet, oaty, golden-syrupy goodness! This year, after baking traditional Anzac biscuits, I thought I would *step out of the square* (just a *little* bit), and try an Anzac biscuit variation- Anzac biscuits with choc-chips! I know! I was a bit scared at first that Mr Anzac wouldn’t take kindly to the addition of the new little chips, but no, they got on swell! All the sweet oat-y deliciousness of Anzac biscuits with a bite of chocolate goodness! A definite must try!

I was in a bakery the other day (because I l-o-v-e baked goods) and I saw some absolutely delicious looking cookies for sale! They were staring at me, tempting me to eat one… or several! However at $3 a cookie, reality made a loud thud next to me, snatching me back from outer-space. It was at this critical moment with half a pain au chocolat in one hand (and the other half in my mouth), I had a mental argument in my head about how much cookies were worth (‘Should I? Shouldn’t I?’), and after much thought concluded I would try making these delicious looking cookies myself at a substantially lesser cost (or fail and come back to buy some).

Hello readers! So it has been quite a while now, since I last cooked. I have a feeling it was because I sort of *cooked myself out*. But then as I was pottering along on my “non-cooking way”, my aunt recommended a book to me, “Garlic and Sapphires- the secret life of a critic in disguise” by Ruth Reichl, and I was once again, inspired to cook as I did before! I highly recommend this book about the fun and turmoil of being a food critic! It has definitely made eating out for me, much more fun and exciting! As well as inspiring me to start cooking more.

MMMmmmmmm…. The delicious smell of freshly baked cookies wafting from the oven! Oh how I have missed this smell! Especially because the past hot weather has made the idea of baking particularly gruesome! Good thing a cold front came in just in time for me to bake a few batches of Christmas cookies!

I always associate stars with Christmas time, but I guess you could make these biscuits at any time of the year. Stars are much more fun to eat than just plain circles because you can bite off each of the points first! Haha. The icing is an essential addition to this almond shortbread biscuit, not only for its colour, but for its delicious sweetness! Yum!

Whose been doing the rain dance at home, because it’s pouring down buckets on this side of town! Rain dance people, please stop, go inside and do something more productive than bringing rain, such as baking up some jam drops. I guess the jam in the cookie “sort of” looks like a drop (if you use your imagination), and hence the name “jam drop”.

White Chocolate Chip and Macadamia Cookies! With White Chocolate Chips and White Macadamia nuts, what cookie could possibly exist that is whiter? Not many I should think. I tend to believe that because the white chocolate, macadamia and batter are all so similar coloured, it is very misleading as to how much chocolate each cookie contains. It may seem like there is no chocolate visible, but one bite and you’re tastebuds will be greeted with a mouthful of chocolatey cookie goodness!
