White chocolate, raspberry and almond blondies!
The age old debate of whether blondes or brunettes are better has still not reached a conclusion, and is unlikely to ever reach one any time soon. However, I can tell you that white chocolate lovers prefer blondes or more specifically blondies! “Blondies?” you exclaim? Yes. Blondies! The name of a delicious cake brimming with white chocolate goodness! Not to be mistaken for the name of a 50’s fashion icon.


Blondies are not your average ‘run of the mill’ cake either! Oh no! The batter is much more firm before you even bake it, an almost dough-like consistency, and the finished cake is quite dense (definitely not sponge-like). But the great thing about blondies, is that while they are a nice golden colour inside, almost resembling butter cake, they are still filled with tantalising chocolate taste! That’s equivalent to one and a half bars of white chocolate energy to all you mathematicians out there! But who really cares about numbers or figures for that matter really, when there’s chocolate cake to be had! So take a break from the dark chocolate, and see what all the fuss about blondes, I mean blondies is about!

White chocolate, raspberry and almond blondies

Ingredients: 125g butter, 200g white chocolate melts, ¾ cup caster sugar, 2 eggs, ½ cup slivered almonds, ¾ cup plain flour sifted, ½ cup self-raising flour sifted, 100g white chocolate chopped, 150g fresh/frozen raspberries, icing sugar for dusting


Steps: Preheat oven to moderate, 180 degrees Celsius. Grease a 20cm square cake tin and line the base with baking paper. Combine the butter and chocolate melts in a small saucepan and stir over low heat until the chocolate melts.

Transfer the mixture to a large bowl and immediately stir in remaining ingredients until just combined. Spread the mixture into the prepared cake tin and bake for approximately 50 minutes or until firm. Allow to cool complete in tin.

Cut into 4 squares, then halve each diagonally to form 16 triangles. Dust blondies with the sifted icing sugar.

Tip! If you’re finding it hard to press the batter down evenly in the cake tin. Don't fret! Just put it in the oven for 10 minutes, then try again to smooth the surface out using the back of a metal spoon. (It should be a lot easier)

Why have just Regular choc-chip or even double chocolate chip muffins, when you could be having Triple Chocolate Chip muffins? That’s right, THREE times as much chocolatey goodness!

mmmmmmmmmmm…. These muffins are so good though! I think the secret ingredient is the chocolate melts chopped finely, because it makes the whole muffin richer. So not only does it look good, but it tastes even better than it looks! There is definitely nothing more disappointing than finding out, what looks like an extremely chocolate-filled muffin, has no chocolate at all!

Feel like a kiss but lacking another pair of lips? Or maybe, put more simply and bluntly nobody wants to kiss you? Well then a chocolate meringue kiss might be in order! It’s filled with sweet chocolate goodness and you can even have a dozen delicious kisses if you want! These chocolate kisses are so delicious! No words can describe how good they are! If you don’t watch yourself you can easily eat whole trays of kisses and then you would be all “kissed out”.

But on a more serious note, if you love your chocolate, then don’t deprive yourself by not trying one of these kisses. They are the perfect balance of chocolate and meringue that just makes your whole body crave for more!

Cupcakes galore!
So there I was sitting with my morning coffee when I realised something was missing! Then suddenly, I was overwhelmed with a chocolate craving. But to my horror our house appeared to be lacking in anything of the satiable chocolate variety. What to do? What to do? This was a telling moment, and I knew it was Chocolate Cupcake time!

These chocolate cupcakes are so moist and rich! Just heavenly! Not that I’ve been to heaven, but I imagine if it was a Utopian kind of place , then people would be eating this type of chocolate cupcake pretty much all the time! Soft, rich and fluffy! The way cupcakes are suppose to be! Not hard volcanic rocks! So what are you waiting for? Baking time!

Fudge Brownie
Brownie-licious!

It’s getting to that time of the week! You know what I’m talking about! Where the “beginning-of-the-week-I-can-do-anything” buzz has worn thin! You know what will make it ALL better? A chocolate brownie! Yes that little block of ‘Chocolatey’ goodness has amazing powers beyond the capabilities imaginable, for a little block. On the outside it looks so plain Jane. But on the inside, this brownie is soft and chewy like good fudge, and the chocolate just melts on your tongue. mmmmmmmmm...

Easter time! A time for religious thought and personal sacrifices or a time of endless guilt-free chocolate binges and family feasts? No matter what your religious inclination, chocolate is bound to be on the agenda at some point or the other. And it probably doesn’t help that they start selling Easter eggs pretty much as soon as the Christmas trees are coming down!

Now being a devout chocolate lover and connoisseur. I definitely know the difference between the rich, lush, positively sinful, chocolate that melts in your mouth, as opposed to the over-sweet, hard, unsatisfying kind. And as any chocoholic would know, ‘nothing beats quality!’
