So everyone has been asked at some point, “what is your favourite food?” To which you usually have to “aah” and “ummm” as your brain tries to sort out the argument in your head of ‘which is your most favourite food in the whole wide world’. I guess with so many different tastes out there, it is hard to just pick one. Usually you come up with a few favourites quickly, but no definitive, ‘the one’, action happening!


Well, today I discovered a way of combining two of my favourite loves- cheesecake and brownies! Yes! Never would I have thought it possible, until today! Mix a little brownie, mix a little cheese cake, add them together and what do you get? Chocolate Cheesecake Brownies!! Really hits the sweet tooth mark, because you have the delicious rich, sweet chocolate goodness of brownie, as well as the rich cheesecake layer! It’s amazing! C’est terrific!

So I figured that I’ve almost solved my problem of determining what my favourite food is! If you combine a little bit of all your favourites you could possibly have “the most amazing food in the whole wide world”, that or you will have one hell of a gastronomic disaster. I’m hoping for the former!

Chocolate cheesecake brownie

Ingredients:

Base- 185g butter melted, ¼ cup cocoa powder sifted, 1 cup caster sugar, 2 eggs, 1 cup plain flour sifted
Cheesecake- 285g cream cheese softened, 1/3 cup caster sugar, 2 eggs icing sugar for dusting

Steps: Preheat the oven to 160 degrees Celsius. Place the butter, cocoa, sugar, eggs and flour in a bowl and mix well until smooth. Spoon into a 20cm square slice tin lined with non-stick baking paper.
Making the brownie base

To make the cheese cake- beat together the cream cheese, sugar and eggs until smooth. Transfer the cheesecake mixture on top of the chocolate mixture. Then Bake for 45-50 minutes or until just set. Cool in tin. Then dust with icing sugar, cut into slices and serve!

Makes 16 slices

Tip! If instead of the top-deck look, you want a swirly look, simply use a butter knife to swirl the two mixtures together just prior to baking!

I am going to have to try this one (although my cooking skills are virtually non-existant) - the concept of these two wonderful treats together is just too good to pass up.

Hey Nina! Hopefully those 'non-existant' skills will suddenly morph into "i'm-an-amazing-cook-and-i-didn't-even-know-it" overnight!
