Chicken and sweet corn soup to warm the soul
Nothing better than hot soup to warm you up on a cold day! And what crazy cold weather we have been having these past few days! It’s almost like Summer decided to pack its bags this year and go on vacation, leaving Winter to take over and wreak havoc all over the country! Hopefully Summer will think twice though and decide to return, for all our sakes.
Anyways, Chicken and sweet corn soup really is a great warmer! Deliciously tasty, hot and thick! It’s times like these you feel like you could just drink soup forever! Aaahhh! Definitely soul food.
Chicken and sweet corn soup
Ingredients: 2 cups chicken stock*, ¼ cooked chicken shredded, 125g can creamed corn, 2 eggs beaten, 1 tbsp cornflour, 2 tbsp water, salt and pepper
* To prepare chicken stock: Boil 2 cups water with ¼ chicken, 3 cloves of garlic, and a small piece of ginger for one hour. (Remove the ginger, garlic, and chicken. Shred the chicken for use later)
Steps: Bring chicken stock to the boil. Add the creamed corn and shredded chicken. Then add beaten eggs one at a time. Stir through. Mix together cornflour with 2 tbsp water in a small bowl, then add this to the mixture. Bring to the boil again. Add salt and pepper. Then serve!

Tip! The trick to getting a nice thick chicken and sweet corn soup is all to do with the cornflour! The cornflour helps to thicken the soup. So you can always add more/less cornflour depending on your preference.
