Caramel Mudcake goodness!
“Parting is such sweet sorrow” ~ William Shakespeare …. That’s why when friends leave sadly, you need to sweeten things up, and what better way than with Caramel mudcake goodness~!
Rich, delicious, delectable and most importantly sweet goodness which can convince almost anyone that everything is going to be okay, as well as temporarily take everyone’s minds off the situation at hand.
My only qualm with making caramel mudcake is that it does take 1.5 hours to bake in the oven, so it is definitely not a good idea for a last minute rush job!
Caramel Mudcake with white chocolate ganache
Ingredients:
Caramel mudcake: 185 g butter chopped, 150g white chocolate chopped, 1 cup firmly packed brown sugar, 1/3 cup (80mL) golden syrup, 1 cup (250mL) milk, 1 ½ cup plain flour, ½ cup self-raising flour, 2 eggs whisked together
White Chocolate ganache: ½ cup (125mL cream), 300g white chocolate chopped
Steps: To make the Caramel mudcake: Preheat oven to moderately slow, 160 degrees Celsius.
Combine butter, sugar, chocolate, golden syrup and milk in a medium saucepan. Stir over low heat, without boiling, until smooth. Transfer mixture to a large bowl and allow to cool, for 15 minutes.
Whisk in sifted flours, then eggs. Pour into a cake tin lined with baking paper and greased around the edges, and bake for approximately 1 ½ hours.
Stand cake in pan for 30 minutes, then turn onto a wire rack to cool. Spread with white chocolate ganache and decorate with strawberries!
To make the White chocolate ganache: bring the cream to the boil in a small saucepan then pour over the chocolate in a small bowl, stirring until chocolate melts. Cover and refrigerate, stirring occasionally until spreadable.
