Caramel Cornflake Cookies!
The Triple whammy! Ask a pharmacist or doctor and they’ll tell you that refers to a patient being on three particular medications (ACE inhibitor, NSAID and diuretic) which has inevitably resulted in renal failure, or in lay-man terms, their kidneys have carked it! And in the medical world is a very bad thing! But in the much more rose-coloured-glasses-delicious world of food, the Triple C Whammy refers to Caramel Cornflake Cookies! And is a very good thing! A very sweet, caramel tasting cookie to be more precise!
I highly recommend these cookies if you have a sweet tooth and love toffee and caramel! You almost feel tempted to eat the caramel by itself! Dearie me! But seriously, what better way to eat cereal? I think cookies for breakfast is the way of the future! Just wait, soon every cereal known to man will have its own cookie equivalent! And I’m not talking about breakfast bars!
Caramel Cornflake Cookies
Ingredients: 125g butter, ˝ cup brown sugar lightly paced, ˝ cup caster sugar, ˝ cup desiccated coconut, 3 cups cornflakes, ˝ cup roasted mixed nuts, 1 egg
Steps: Combine the butter and sugars in a medium saucepan and heat until the butter is melted. Take off the heat and gently stir in the coconut, cornflakes, nuts and lightly beaten egg. Drop teaspoonfuls of mixture on baking trays lined with baking paper, and press down lightly. Bake for 10-12 minutes or until golden brown. Leave to cool completely on trays.
