Bocconcini, asparagus & avocado salad

Aah! Nothing better than a simple salad on a lazy Summer day. I swear during the past few days which were truly unbearably hot, I almost contemplated throwing out the oven, because goodness knows, its almost impossible to bake anything when you are dying from the heat. However I came to my senses before any harm was done to any appliances, and decided to make something which did not require baking.
True, this is possibly one of the most bizaare salads that I have ever tried. However I think the odd combination is surprisingly tasty, that is mainly if you are an avocado fan, and do not hate asparagus or bocconcini for that matter. Bocconcini has a very mild flavour, and all the ingredients in this salad in general have very mild flavours, so it goes well with a main that has strong flavours.
Bocconcini salad
Ingredients: 200g bocconcini, 1 avocado, 1 bunch of thin stalked asparagus, 1 small Lebanese cucumber, olive oil for drizzling, salt and pepper
Steps: Remove the seed from the avocado and cut into wedges. Thinly slice the cucumber. Cut the asparagus stalks into thirds, bring a small saucepan of water to the boil, add the asparagus and cook for 2 minutes, then remove from the water. Combine the avocado, asparagus and cucumber. Slice the bocconcini into quarters (depending on the size of your bocconcini) and add this to the salad. Drizzle with olive oil, and salt and pepper to taste, then toss and serve!

seeing as i requested an entry on salad i thought i must comment. its good to see you have taken into account my inability to cook lol. im sure i can whip this one up without too much mayhem
