Berry Breakfast trifle!
Berries, oats and yoghurt! What a nice way to start the day! Sweet and dessert-like, but healthy too! So traditional trifle usually has a sponge layer, but in this modern day version, that has been replaced by the oats and yoghurt layer; makes it more breakfast friendly.
Wow! There are SO many Fun facts about Strawberries here! Did you know there is a museum in Belgium just for strawberries? I wonder whether it smells fresh and fragrant with the smell of strawberries of whether it just smells like decay? And apparently if you split a strawberry in half and share it with a member of the opposite sex, you will fall in love! Haha Someone should try that one out and tell me if it works! What a good story to tell at the wedding reception!
Berry Breakfast trifle
Ingredients: 1 punnet strawberries, 1 punnet blueberries, 250g plain yoghurt, 1 cup rolled oats, ½ cup pineapple juice or apple juice, 3 tsp honey
Steps: Place the oats in the pineapple juice, cover and refrigerate for at least one hour. Wash the strawberries, de-stem and then mash half the strawberries with the honey. Add the yoghurt and rolled oats to the mashed strawberries. Slice the remaining strawberries thinly. Into serving dishes, layer yoghurt oat mixture with the blueberries and strawberries, finishing with a berry layer! Serve!
Note: you will probably have excess yoghurt mixture, so just cover it, then mix with some more berries for more trifle the next day!
Serves 4
Tip! If you find that you like you’re berries just a tad sweeter, why not drizzle some honey onto each yoghurt layer before adding the berry layer!
